Asian-Style Meatballs for Meal Prep ?? Makes about 4 servings
Ingredients:
1.5 lbs ground turkey, ground chicken, or lean grass fed ground beef
1/3 cup old fashioned oats, uncooked OR breadcrumbs made from dry Ezekiel bread *see notes
1 whole egg, whisked a bit
1 inch nob of fresh ginger, peeled and grated
2 fresh garlic cloves, minced
1/4 cup fresh cilantro leaves, chopped small
4 green onions, chopped small
2 Tbsps coconut aminos, Bragg’s liquid aminos, or low sodium soy sauce
2 tsps sesame oil
sesame seeds for garnish, optional
For the sauce:
2 Tbsps sesame oil
1/3 cup coconut aminos, Bragg’s liquid aminos, or low sodium soy sauce
1 Tbsp sriracha sauce (more or less dependent on the heat you like)
1 juice of, large fresh lime
3 green onions chopped thin
Instructions:
Preheat your oven to 450° degrees F.
Line a large rimmed baking sheet with parchment paper.
Combine all of your meatball ingredients, (except for sesame seeds or sauce ingredients), into a large glass bowl and combine thoroughly. I often really get my hands in there to really get things mixed.
Form into small meatballs and place on parchment paper-lined baking sheet.
I used my cookie scoop to help measure/create nice, uniform balls. If your mixture is too “wet” add a bit more oatmeal/breadcrumbs.
Bake for 10-12 minutes until golden on the outside, and cooked through the center.
Meanwhile, in a separate small bowl, whisk all of your sauce ingredients and combine well.
Serve dipping sauce with meatballs, and sprinkle with sesame seeds if desired. ***notes: to make Ezekiel breadcrumbs, simply set out 3-4 slices of Ezekiel bread overnight on the counter, or toast in toaster until all moisture is gone. Break up dried bread and add to a small food processor.
Add a tiny sprinkle of sea salt, dried parsley, and garlic powder (tiny, tiny pinch!), then process in your food processor for a few seconds until crumbs are created. You can use this in place of breadcrumbs in any recipe.
For meal prep: Divide meatballs between 4 glass food prep containers. Add 1/2 cup cooked brown rice, and a large serving of cooked-crisp broccoli. Drizzle a bit of the serving sauce ontop of everything.
