Greek-Style Quinoa Salad ?
{This QUICK, flavorful salad is GREAT for all the reasons, so double the recipe and you’ll have tomorrows tasty lunch covered too! }

makes 4 servings
1.5 cups cooked quinoa
1 large bell pepper, diced
1.5 cups fresh cherry, or grape tomatoes, halved
1 cup sliced crisp cucumber
1/3 cup Kalamata olives, sliced
1 small red onion, finely sliced or diced
a small bunch of fresh herbs, like mint, basil, parsley or cilantro, leaves chopped (experiment with your favorites!) For the dressing:
2 Tbsps extra virgin olive oil
Juice of 2 small ftesh lemons
1 Tbsp raw honey
1 small fresh garlic clove, minced
sea salt and pepper, to your taste .
In a large bowl, combine cooked quinoa, bell pepper, baby tomatoes, chopped cucumber, olives, onion, and fresh herbs.
In a separate small bowl, add the olive oil, lemon juice, raw honey, garlic, sea salt and pepper. Whisk well to combine.
Pour the dressing over the salad before serving and toss gently to combine. Taste and adjust the seasonings if needed. Enjoy!
Stays great refrigerated for 4 days.
