{New} Cilantro Lime Cauliflower “Rice” ?

What is it?! Rice or cauliflower? It’s just cauliflower pulsed in a food processor until its about the size of rice. .
When it’s cooked and seasoned well, it IS delicious and you’ll feel great about getting more vegetables into your day!
Try this recipe out tomorrow with your taco Tuesday Dinner plans! ??? Cilantro Lime Cauliflower Rice
makes about 4-5 servings as a side
Ingredients:
1 large cauliflower head or 16 ounces store-bought cauliflower rice
1 Tbsp avocado oil, or ghee
3 cloves fresh garlic, minced
sea salt and freshly ground black pepper, to your taste
1-2 jalapenos, seeded and chopped
½ cup chopped fresh cilantro
2 limes, juiced
Instructions:
Begin by preparing your cauliflower rice.
Use 1 large head of cauliflower and chop into florets.
Pulse florets for about 10-15 seconds in a food processor – do not over process, or else it will turn mushy. A large grater can also be used instead.
Heat oil + ghee in a large skillet over medium to high heat. Add garlic and cook while stirring until fragrant, about 20 seconds. Add the cauliflower rice, sea salt, and jalapeno, then stir to combine.
Cook, stirring just every minute or so, until the cauliflower rice is hot and turning golden in places, about 5-8 minutes.
Remove the skillet from the heat, season with sea salt and pepper to your taste, then stir in the lime juice and fresh cilantro leaves. Enjoy!
