Celebrating Friday with this TEN MINUTE PIZZA CAULIFLOWER GNOCCHI and SPINACH WALNUT PESTO SHRIMP! Happy Weekend loves. Hope you’re all having a fabulous week. Just made this for lunch for my boyfriend and I and it was BOMB. Used the leftover pesto from last weekend on the shrimp. Literally takes no time at all. Super happy the weekend is here…although I do have quite a bit of work to get done before going away next week skiing. What are your plans?

Deets: @lef_farms greens. @traderjoes cauliflower gnocchi tossed in olive oil, salt, pepper, basil, garlic powder and oregano and air fried for 10 minutes on 400 (shake a couple times). Then toss them in your favorite pizza sauce and sprinkle with dairy free Parmesan. @traderjoes wild shrimp boiled for 3 minutes then patted dry and tossed in this pesto. Pesto: 3 cups baby spinach, 1/4 cup basil, 1/4 cup olive oil, 1/4 cup raw walnuts, 1 tablespoon lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper and pinch of red pepper flakes. Process until smooth. •
