{NEW} Creamy Chicken Tortilla Soup ????
Low carb, Low sugar, Gluten free, Paleo friendly, Protein packed, Clean Eating Comfort food!
{ This is THE BEST tortilla soup I’ve ever eaten! It’s a tad on the spicy side, which we LOVE here…but if you want a more mild soup you can definitely decrease the amount of peppers in this recipe. The flavors just get tastier the longer it cooks, and it’s even BETTER the next day, which makes this ideal for meal prep.

I love to set out a variety of toppings and allow the kids to top their own bowls…they love it!

Makes 8 servings
1 Tbsp avocado oil, or olive oil
2 anaheim peppers, diced
1 small jalapeno pepper, diced
1⁄2 cup diced yellow onion
1/2 cup diced red onion
3 cloves fresh garlic, minced

48 ounces of chicken broth/stock (6-7cups)
15 ounces of tomato sauce
15 ounces diced roasted tomatoes, in juice
4-5 cups cooked chicken, shredded
4 large, ripe fresh tomatoes, diced
4 Tbsps chopped cilantro leaves
1 Tbsp chili powder
2 tsps cumin
1/2 tsp pepper, or to taste
1/2 tsp sea salt, or to taste
Add at the very end:
2 cups organic unsweetened coconut milk, or organic full-fat heavy cream
Topping ideas:
shredded cheese
diced avocado
cilantro
lime wedges
chopped green onions
fresh jalapeno slices
organic tortilla chips

Instructions:
Add oil to a large stockpot, and heat over medium-high heat.
Saute the peppers, garlic and onions in the hot oil for about 4-5 minutes.
Add remaining ingredients (besides cream and toppings), turn heat to low and allow to simmer, stirring occasionally for at least an hour.

Remove from heat a few minutes before serving, then stir in cream.

Dish into serving bowls and add your favorite toppings!

Slow Cooker Instructions:
Rub/brush the bowl of your slow cooker with the oil.
Add everything except the cream and toppings into your slow cooker and cook on high for 5-6 hours, or low for 7-8 hours.

A few minutes before serving, stir in cream.
