There were SO MANY questions about these little Tomato + Tuna Bites on my story last night!ūüćÖ

So here’s the answers:
I made these Tomato + Tuna Bites super quick for a late lunch yesterday.
.
We have fresh garden tomatoes overflowing, so I sliced 3 of them up about 1/2 inch thick, and sprinkled with sea salt & pepper.
.
I used 2 cans high quality tuna fish, mixed with a touch of avocado mayo, and 1 tsp fresh lemon juice. You could substitute smashed avocado for the mayo if you like.
.
I sliced cheddar cheese into very small squares, and placed on top of the tomato slices.
.
A good spoonful of the tuna mixture on each.
.
Top with a dill pickle.
.
A perfect light, fast Summertime lunch or snack idea!
