#ad No Christmas dinner spread is complete without cheese, whether it’s a cheese board or a cheesy dish. Do you agree? ? Today, I’m bringing you my broccoli, and cauliflower smoked cheddar bake featuring @violife_foods EPIC dairy-free festive platter. I’ve used the smoked cheddar flavour to create this dish and trust me, you will not be able to tell the difference (taste and looks-wise) between this dish and one that contains dairy cheese. This recipe serves 4-6, and it is pretty straightforward to make.

You’ll need:
?1 small head of broccoli, broken into florets
?1 small cauliflower, leaves removed and broccoli florets
?50g flour, sifted
?50g dairy-free spread (or butter)
?½ teaspoon Dijon mustard
?500ml unsweetened cashew or soya milk, warm
?100g @violife_foods smoked cheddar flavour, chopped into small cubes

Directions
✨Preheat the oven to 200°C. ✨Rinse the broccoli and cauliflower under cold, running water. Then tip the cauliflower into a large saucepan of salted, boiling water. Cook for five minutes over medium heat then add the broccoli and cook for a further few minutes then drain, reserving some of the cooking liquid. ✨While the vegetables are cooking, heat the dairy-free spread in a medium saucepan over medium heat. Once it is melted and warm, add the flour and cook for 2-3 minutes. ✨Take the pan off the hob then add the warm milk, a little at a time, frequently stirring to form a smooth sauce. ✨Put the pan back on the hob over low heat and stir in the mustard and the chopped Violife cheddar. Keep stirring until the cheddar melts and the sauce is thickened. If the sauce gets too thick, use some of the vegetable cooking water to loosen it. ✨Transfer the vegetables into an oven dish then pour over the cheddar sauce. Cook in the oven for 25 minutes until bubbling then allow to cool before serving. ✨Enjoy on its own or as a side dish with the rest of your Christmas meal!
