#AD When it comes to herbs and spices, there is no doubt that @schwartz.uk are market leaders. I use a lot of their herbs and spices in my cooking, and if you’ve cooked any of my jerk recipes, you will already know that their Jerk seasoning is my favourite. Now that #Schwartz has gone organic, I’m even more excited to use more of their range as it means fewer chemicals and more flavour in my food.

Legumes are lovely in curries, but they are equally fantastic when made in stews with herbs like parsley, thyme and oregano. Today, I used #SchwartzOrganic Mixed Herbs to make a spicy cannellini bean stew.

To make the stew, you’ll need:
240g cooked cannellini beans
8 cherry tomatoes, chopped
1 tbsp tomato puree
1 vegetable stock cube
1 medium shallot, finely chopped
1 fat garlic clove, finely minced
½ tsp Schwartz Organic mixed herbs
½ green chilli, finely chopped
Black pepper, to taste

Heat a splash of water or 1 tbsp of coconut oil in a medium saucepan over medium heat. Once warm, add the shallots and sweat for 1-2 minutes until soft. Add the garlic, mixed herbs, chilli, tomato puree, and cherry tomatoes and cook for 3-4 minutes stirring frequently. Add the cannellini beans, vegetable stock and around 150ml of water. Stir thoroughly then put the lid on the pan and cook for around 10 minutes or until the sauce thickens. Season with salt and black pepper as needed then serve over rice and half an avocado if you wish for that extra bit of freshness and it is a healthy fat, so why not. #plantbased #beans #avocadolovers
