Celebrating Seafood Sunday with the SHRIMP TORTILLA SOUP! 20 minutes to make this soup and it is perfect for football day too ? **Tip: I like adding the shrimp separately so they don’t over cook in the soup. Deets: Soup: saute one medium chopped onion and a 1/4 cup chopped red pepper in 2 teaspoons oil, add 2 cloves minced garlic and sauté for another minute, then add 15 ounce can tomato sauce, 1/3 cup salsa, 1 cup broth, 1.5 cups water, 4 tsp cumin, 1 tsp chipotle powder, 1/2 tsp garlic, 1/2 tsp salt, 1 T coconut aminos, 1 tsp lime juice and one T tomato paste. Cook over medium heat for about 20 minutes, stirring. NOTE: for a thinner soup add more water NOTE: for less spice cut down on cumin amount. Top with some boiled shrimp tossed in olive oil and cilantro, crispy tortilla strips (I air fried @sietefoods almond flour tortillas cut up), avocado, cilantro, jalapeño and fresh tomatoes. •
