Dinner today is inspired by my Nigerian ?? roots. This recipe is called ‘Efo-riro’ and it is normally made with a Nigerian Spinach (shoko), tomatoes, chilli, fermented locust beans, crayfish and a bunch of other spices. The recipe is easy to veganise, but it is very difficult to get the umami flavour that crayfish normally produces. I also don’t have access to the traditional vegetables used as I’m in the UK so I’ve been trying to develop a dish that is inspired by it.

I’ve finally created something (oil-free too ??)that I’m proud of using ingredients that are widely available and I’ve shared the recipe with you on my blog ?? I’ll put the link in my stories. (Update it’s in my story now)
