?Recipe: Press 1-14oz block extra firm tofu in paper towel to remove excess liquid. Cut into cubes and toss in a large bowl with 1/2 cup cornstarch until all sides are evenly coated. Bake at 400F until very slightly crispy and golden, about 15 minutes. Meanwhile, prepare sauce by whisking: 1/2 cup BBQ sauce (preferably low-sodium, low sugar…I use Annie’s organics), 1/2 cup rice vinegar, 1/4 cup low-sodium tamari, 2 tsp maple syrup (or to taste), 1 tbsp sesame seeds, 2 tsp yellow miso, 1 tsp sriracha, 1-inch finely grated ginger. When tofu is ready, heat sauce on low about 10 minutes until thickens. Coat tofu in heated sauce and serve immediately with preferred grain or veggies. (If you want to use less sauce, you can refrigerate the remainder.)
