?BBQ Tofu with Crispy Sweet Potato (oil-free option too)?Have a happy Thursday friends. Sending ?.
✅Recipe: Tofu: Press 1-14oz block extra-firm tofu. Slice tofu into bite-size cubes. Place in plastic container with 1 tbsp cornstarch, 1 teaspoon garlic powder and salt as desired. Gently toss container to coat tofu. Sauté tofu in non-stick skillet with some olive oil, or bake on non-stick baking sheet at 400F, until crispy. Remove from skillet when ready.✅Slice 1 onion lengthwise into thin strips. Sauté onion in large non-stick skillet with some olive oil or a little water. Cook on medium-high until golden brown (almost caramelized).✅Add desired amount of BBQ sauce to skillet with the onions and cook until warmed through. Add the tofu and gently mix until coated in sauce.✅Potato: Peel one medium sweet potato and slice into 1/2-inch thick rounds. Transfer to large bowl. Add 1 tbsp olive oil (or coconut aminos), 1 tbsp cornstarch, 1 teaspoon garlic powder and salt to taste. Use hands to coat potato. Either transfer to non-stick baking sheet and bake at 400F until crispy, or pan-fry with a little oil in non-stick skillet.
