🌱Broccoli + chickpea ’cheezy’ patties (oil-free, gluten-free) with easy guacamole 🌱It’s Saturday and I’m exhausted. Haven’t been feeling great this week physically. It’s funny how many people say to me, ‘You eat so well, you shouldn’t get sick!’ But stress trumps almost everything and it’s been a busy week! Here’s to lots of sleep 😴. 💛
🌱Recipe: Make flax egg by mixing 2 tbsp flaxseed meal (ground flaxseed) with 6 tbsp water. Let sit for 10-15 minutes. Steam 2 heads broccoli until just fork tender and chop into small pieces. In a large bowl, mix 1+1/3 cup chickpea flour, 1/4 cup nutritional yeast, 1/2 tsp garlic powder, 1 tsp salt (or to taste), chopped broccoli, 1/2 cup cooked chickpeas and flax egg. Mix by hand until dough forms. (Add a little water if too dry.) Form about 6 patties. Bake on lined sheet at 400F until golden brown, about 15-20 minutes, flipping half way. Serve with easy guacamole (see recipe in previous post). .
