CREAMY CASHEW Pad THAI THURSDAY! I was craving something hearty today…and used up my leftover shrimp from last night to throw this bowl together! This sauce I made with @georgiagrinders cashew butter and it is killer and super easy, recipe below. I am heading north this afternoon for a couple nights to see some friends and am pretty pumped. Deets: arugula, sautéed shiitakes, red cabbage, snap peas, sautéed peppers, sautéed shrimp (tossed in a little sriracha for a kick), rice noodles, cashews and this creamy sauce. RECIPE: 1/4 cup @georgiagrinders cashew butter, 1/4 cup full fat coconut milk, 1-2 tablespoons coconut aminos depending on how sweet you like it, 1 tablespoon Tamari, juice of 1/2 lime (or more if you like a tang), 1.5 teaspoons curry powder, 1/4 teaspoon or more red pepper flakes. Whisk together until smooth and creamy!
