🌱Falafel hummus bowl🌱 🙄I had a huge calamity making this meal. Keep reading!-Before I get into it, the falafel recipe here is from my new favorite vegan cookbook, ‘Tahini & Turmeric’ @mayihavethatrecipe .I love this falafel recipe because it uses chickpea flour in addition to whole chickpeas so your falafels don’t fall apart!—-going back to that calamity—I decided to make hummus and falafels at the same time, and you should never cook your garbanzos before forming the falafel patties, and so I forgot to cook the garbanzos for the hummus!!! When I started pulsing all the hummus ingredients in the food processor, I realized! Not wanting to throw away all those delicious ingredients, I added water to the uncooked hummus and simmered it until the garbanzos in the hummus were cooked. (Think hummus porridge!) Then I processed it again, refrigerated it, and it turned out just fine😅. Now that’s kitchen improv!!! Phew! (Though I wouldn’t recommend this method🤣.) (Falafel recipe in cookbook.)
🌱My basic hummus recipe: Process 1/4c lemon juice + 1/4c Tahini about 1 minute until creamy. Add 1-1/2c COOKED chickpeas, 2 tbsp pine nuts, 1 garlic clove (minced), 2 tbsp extra virgin olive oil, 1/2 tsp ground cumin, 1/4-1/2 tsp chili powder, 3 tbsp water, a few turns black pepper, salt to taste. Process until smooth and creamy. Add more water if needed. Serve with pomegranate seeds.
