Feeling PEACHY on this Monday ? GRILLED BALSAMIC PEACH CHICKEN SKEWERS with a GARLIC THYME YOGURT SAUCE (dairy free!) Happy Monday loves! Made this for dinner last night and it was delicious ? the chicken is sweet and savory and perfect for dipping in this easy sauce. I paired it with a simple baby spinach salad with lemon and olive oil. Hope everyone enjoyed the weekend. Mine was super relaxing and eventful at the same time. My boyfriend is on vacation this week so I’m trying to take a little time off myself. We are headed to an amusement park tonight with the kids so excited for some roller coasters! Deets: 4 chicken thighs (or breasts) cut up into 3/4 inch pieces. Marinade: 1 peach (peeled), 1/2 cup balsamic vinegar, 3 tablespoons olive oil, 2 tablespoons dairy free yogurt, 1 tablespoon coconut aminos, 1 tablespoon Dijon mustard, 1 teaspoon honey, 1 clove garlic, 1/2 teaspoon salt, 1/4 teaspoon pepper. Blend ingredients and marinate the chicken for about 1-2 hours in fridge. Place on skewers and grill. Dip: 1/2 cup dairy free yogurt, 1 clove garlic minced, 1 tablespoon fresh thyme, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1 tablespoon olive oil, a couple squeezes of lemon juice, 1/4 teaspoon lemon zest. •
