Fingers crossed I return home as Somi and not as plantain ?

This was breakfast – baked plantains with ‘egg sauce’ aka tofu scramble. Some how I think this will be my staple breakfast until I return. I’m low key making up for all the plantains I’ve been deprived of recently.

I hope to show you yams before I leave. The problem is that new yams are in season right now and I don’t like them because they are a lot softer than regular yam and they can sometimes be bitter. I know a lot of people called sweet potatoes yam but yams in Nigeria are totally different from sweet potatoes. Fingers crossed I get a chance to show you the difference. The recipe for my egg sauce is already on my blog (which I will resurrect soon, I’m trying to enjoy this time off as best as I can).
