FLASHBACK Friday to the juiciest ZAATAR LEMON SEARED CHICKEN and crispy ROSEMARY GARLIC POTATOES. This is #whole30 for those of you doing the September While 30. This chicken method from @cookinglight makes the JUICIEST chicken! Sharing this method below. Made these potatoes last night…one of my faves! Hope you all had a fabulous week. I feel like I got a lot accomplished for my upcoming cookbook, even though it was a short one! Any big plans this weekend?

Deets: CHICKEN: pat breasts dry, season with salt and pepper then place in the fridge on a rack uncovered for 30 + mins. Remove, pat dry again, season with zaatar seasoning (I get mine from @nomadsmarketplace) and some lemon zest. Heat cast iron over medium low with some coconut oil and place chicken breast side down and cook for 9 minutes. Lift the chicken and add a little ghee or butter and let it cook for one minute before flipping and cook for another 5 mins on the other side. Potatoes: (see method in my stories) coat with a little olive oil, season with salt, pepper, garlic powder and fresh rosemary and bake for about 20 minutes in a pan on 425, flipping a couple times. Broccolini blanched then sautéed. •
