GINGER TAHINI STUFFED SWEET POTATO SUNDAY! Happy Sunday loves 💕 I hope you’re all having an enjoyable weekend. I’ve had a wonderful day spending time with my sister and my aunt. Had brunch at this adorable little Cafe this morning. We’re headed to dinner on the beach in a bit. Sharing this bowl I had for dinner the other night because it was delicious (sauce below) 😋 used up the end of my meal prep for this so the only this I had to do was heat the veggies and boil some eggs. Ten minute meal and it was perfect. Wishing you all the best night ❤️



Deets: Greens, roasted broccolini and roasted mushrooms (tossed in some avocado oil and coconut aminos/salt/pepper), baked @friedasproduce purple sweet potato stuffed with avocado, micro greens, @suncorefoods hemp seeds, @vitalfarms soft boiled eggs. and ginger tahini sauce. Sauce: 1/2 @seedsofcollaboration tahini, 1/2 cup water, 1/4 cup apple cider vinegar, 2 tablespoons grated ginger, 1 tablespoon minced garlic, 1/4 onion grated, 1 tablespoon coconut aminos, 1 tablespoon honey (or more for sweeter). I put all ingredients in a mason jar and shook it well (add more water if you want). •
