Happy TOAST-day. Avo-toasting THREE ways today…because avocado toast 🤷‍♀️ I prepped some Japanese sweet potato toasts this week (and used leftover shrimp and veggies), so these took me ten minutes to throw together (including boiling this egg!) I had these cold and they were delicious! I had two after the gym earlier and just ate the third one for part of my lunch 😋 Sometimes I do reheat them in a toaster, but I think they are just as good cold! Which one would YOU choose?



Deets: 3 slices of Japanese sweet potatoes (cut 1/3 inch thick and baked on 400 for 30 minutes) then refrigerated. 1️⃣ mashes avo, leftover roasted asparagus and shrimp, pea shoots, cabbage, tomatoes and leftover maple-chipotle-tahini sauce (recipe in taco post a couple days ago) 2️⃣ arugula, avocado sliced, soft boil @vitalfarms egg, and everything but the bagel seasoning. 3️⃣ mashed avocado, strawberries, @bhufoods paleo granola, @spreadthelove almond butter and @salbachia chocolate covered chia seeds. •
