SPINACH PIE STUFFED FISH! The perfect recipe for the holidays! Or any night really. These roll ups are so fun to eat and absolutely delicious. I used fresh tilapia from Colombia, which works perfectly! Tilapia is great because it is a flaky white fish but it is firm and stays together when baked. Check my stories for a step by step! Deets for Recipe: Preheat oven to 375. large tilapia filets (about 2 pounds), sliced down the middle to separate into two halves. Mix together 1 cup frozen spinach (thawed), 1/4 onion chopped, 1/2 cup feta cheese, 2 tablespoons cream cheese (I used dairy free), 1/4 cup Parmesan cheese, 1 egg white, 2 tablespoons chopped sun dried tomatoes. Salt and pepper the fish on both sides. Spread a layer of the cheese spread on each filet and roll up carefully. Use toothpicks to keep the roll ups together. Place the fish on a baking sheet lined with parchment paper, brush with oil or ghee and bake for 25 minutes. •
