HONEY SRIRACHA TURKEY MEATBALLS AND ALMOND GINGER RICE NOODLES! Happy Hump day loves! I made some miso meatballs and reminded me I hadn’t shared these babies yet. I made these last month a few times and they were DELICIOUS. I used my almond ginger dip for the noodles, which also works well on veggie noodles and as a dip ? I have a busy afternoon, but sending lots of love!

ALMOND GINGER DIP: 3 tablespoons almond butter (I used @spreadthelove), 2 tablespoons dairy free yogurt (I used @foragerproject), 1 tablespoon lime juice, 2 tablespoons coconut aminos, 2 teaspoons tamari soy sauce, 2 teaspoons maple syrup, 1/2 teaspoon ginger, 1/2 teaspoon sesame oil, 1 teaspoon minced garlic, salt/pepper/red pepper flakes to taste. •

MEATBALLS: 1 pound turkey, 2/3 cup finely chopped mushrooms, 2/3 cup diced onion, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon pepper, One egg. Mix together well, roll into balls and bake for 12-15 mins on 400. •

HONEY SRIRACHA SAUCE: 2 tablespoons ketchup, 1 tablespoon rice vinegar, 1.5 teaspoon ginger, 1 clove minced garlic, tablespoon honey, 2 tablespoons sriracha, 2 tablespoons coconut aminos, Few drops sesame oil. Hear over medium heat and stir until thickens. •
