HUMP DAY DAIRY-FREE TUNA MAC and CHEESE! Happy Wednesday loves. One of my favorite meals as a kid was Mac and cheese with tuna. #Ad I recreated my childhood fave for lunch last week and still dreaming about it. ? This is my favorite dairy free Mac and cheese sauce it’s so creamy! It is packed with veggies too. I used @portofinotuna, because I have been hooked! This tuna is so good…it’s Wild caught tuna and has just three ingredients: tuna, extra virgin olive oil and sea salt. So tender and not dry! You can purchase on Amazon or Boxed online, and if you’re in the Boston area you can get it at Market Basket or Shaw’s. The tuna comes in pouches or cans, so you can travel with the pouches! Deets: chick pea pasta, tossed with this cheese sauce, Tomatoes and @portofinotuna. Served over some arugula. Sauce: 4 cups of water (or broth), 2 medium sized Yukon gold potatoes peeled and diced, 2 medium carrots washed and diced, 1/2 chopped onion, 1/2 cup raw cashews, 1/4 cup whole fat coconut milk or cream, juice from half of a lemon, 2 tablespoons nutritional yeast, 1/2 teaspoon salt (or more to taste), 1/2 tsp black pepper, 1/2 teaspoon garlic powder, 1/4 cup fresh dill (or any herb). In a large pot boil about 4 cups of water (or broth if you prefer). Boil the veggies in the water for about 10-15 mins until soft. Save 3/4 cup of the water from veggies once they are done. Remove veggies and place in a blender with the rest of ingredients and the water. Blend until smooth.
