HUMP day eats! The juiciest ZAATAR LEMON SEARED CHICKEN and crispy ROSEMARY GARLIC POTATOES. I just discover the PERFECT seared juicy chicken from @cookinglight and I’m never going back! Deets: CHICKEN: pat breasts dry, season with salt and pepper then place in the fridge on a rack uncovered for 30 + mins. Remove, pat dry again, season with zaatar seasoning (I get mine from @nomadsmarketplace) and some lemon zest. Heat cast iron over medium low with some coconut oil and place chicken breast side down and cook for 9 minutes. Lift the chicken and add a little ghee or butter and let it cook for one minute before flipping and cook for another 5 mins on the other side. Potatoes: (see method in my stories) coat with a little olive oil, season with salt, pepper, garlic powder and fresh rosemary and bake for about 20 minutes in a pan on 425, flipping a couple times. Broccolini blanched then sautéed. •
