I just finished an amazing live workout and I’m feeling awesome! I know I’m going to sleep like a baby today…it’s been such a long time since I worked out in the evening and evening workouts have that effect on me 😊

Today’s bowl, potato wedges with 🥑 peas, 🍅, watercress and maple mustard tofu. ✨Maple Mustard Tofu Recipe💫
– 200g tofu, drained of excess water and cut into thick cubes
– 2 tablespoons Dijon mustard – 2 tablespoons maple syrup
– ¼ teaspoon garlic powder or ½ medium garlic clove finely minced – pinch of salt

Directions: Combine maple syrup, mustard, garlic and salt in a bowl then evenly coat the tofu pieces in the 3/4 of the dressing. Leave to marinate in the fridge for 20-30 minutes then bake in the oven at 220C for 25 minutes or until the tofu is firm and slightly browned. Once browned, toss the tofu in the remaining dressing and enjoy! Have a wonderful evening lovelies #veganbysomi
