PLANT BASED QUESADILLAS! Sharing these babies that I made last week…because I’m thinking they need to happen again. Made some vegan sweet potato, avocado, vegan Gouda and arugula quesadillas with a no added sugar spicy creamy orange-apricot BBQ sauce! So delicious! I love quesadillas, because you can get creative with the fillings and the sauces 🙃 Recipe for this sauce below! •


Sauce: 1/4 cup apricot preserves (no added sugar), 1/4 cup orange @zevia (boiled down), 1 tablespoon red wine vinegar, 1/4 cup BBQ sauce, 3 tablespoons coconut cream. •
