Salad greens are my thing right now. I’m enjoying huge bowls of them on their own or with a combination of other veggies or as an ‘important’ part of my meals. I don’t want to refer to them as a side 😜 You really should always try to make greens a major component of your meals, never treat them as a side because they are the nutrient powerhouses.
On my plate, I have oven roasted potatoes, tempeh in a creamy tarragon sauce and greens. The recipe for this (including the potatoes) will be up on my blog tomorrow, I just didn’t have time to write it up coherently. As always, I’ll add the link to my stories. Enjoy the rest of your day 😊
