Black rice pudding with ? berries, red currants, chopped walnuts and desiccated ?for breakfast this morning. I love my oats but it’s nice to switch things up sometimes ? As always the recipe is easy peasy you need:
100g black rice
50ml coconut milk
½ tsp vanilla paste
1 tbsp maple syrup or a date •
Put all the ingredients in a saucepan and bring to the boil over medium heat. Reduce the heat and cook on a simmer without the lid or it will bubble over for around 25-30 minutes or until the rice is tender. Add more water as needed if the rice is too firm. Once cooked, spoon into serving bowls and top with your favourite fruits, nuts and yoghurt if you wish ?
