Pancake Sunday in full effect over here with a new grain-free kabocha squash pancake recipe! Sunday is looking good so far, got a workout in, bought some new ceramics…doing some client cooking this afternoon…and hopefully relaxing a little. Topped these off with some homemade coconut milk yogurt, @georgiagrinders cashew butter, warm blueberries and Paleo granola. Recipe for the pancakes below! Happy Saturday loves!

Recipe: 1 cup steamed or roasted kabocha squash (no extra liquid), 1/2 scoop of plant protein, 2 tablespoons coconut flour, 2 tablespoons cassava flour, 3 egg whites, one egg, 1/2 teaspoon cream of tartar, 1/2 teaspoon baking soda. 1/4 cup almond milk. Blend together!
