#ad Stir-fries are one of my favourites meals because of how simple and quick they are to make. The only trouble with them is that it can be a little challenging to pack flavour into them within a short cooking time, and that’s where sauces/marinades like this one from @geo.watkins come in very handy!??

I made this shiitake mushroom stir-fry today within 6 mins, and I was able to pack intensify the mushroom flavour with the mushroom ketchup from #geowatkins. The recipe is pretty straightforward, you need:

½ pack mixed vegetables
100g shiitake mushrooms, cleaned and halved
3 tablespoons sweet chilli sauce
2 tablespoons #geowatkins mushroom ketchup
1 medium garlic clove, finely minced
½ red chilli pepper, finely chopped
1 spring onion, finely chopped
2 teaspoons oil
½ teaspoon sesame oil (optional but great for flavour)
Light Soy sauce, to taste
Steamed rice or noodles, to serve

✨Combine the sweet chilli sauce with the mushroom ketchup then set aside. ✨Heat a wok or frying pan with the one teaspoon of oil, add the shiitake mushrooms and fry for 2-3 minutes until they soften slightly then take them out the pan. ✨Add the remaining teaspoon of oil into, then add the spring onions, chilli and mixed vegetables. Stir-fry for 4 minutes then add the mushrooms, sweet chilli and mushroom sauce, sesame oil and season with soy sauce. ✨Stir fry for a further minute then take the pan off the heat. ✨Serve the stir-fry over rice or noodles, sprinkle with toasted sesame seeds.
