Throwing it back to this #whole30 style TACO CILANTRO LIME CAULIFLOWER RICE bowl with BAKED PLANTAINS and TWO INGREDIENT MANGO CHIPOTLE SAUCE!!! This sauce is one of my favorites from this past year. Being the last Thursday of the year, thought I’d share an oldie. Hope you all had an amazing holiday. I took a couple days off the gram to enjoy and be present with my family and friends. Feeling pretty unmotivated to work today to me honest, but trying! I always forget how good plantains are, and I’m thinking I need to pick some up this week. How was your holiday?

Deets: greens, cabbage, avocado, tomatoes, cilantro lime cauliflower rice (2 tablespoons onion chopped sautéed in 1 teaspoon coconut oil, add 1 cup cauliflower rice and sauté for a few minutes. Add 1/2 teaspoon salt and some pepper and then toss with 1/3 cup cilantro chopped and 1/2 teaspoon lime zest and 1 teaspoon lime juice…double recipe for more), baked plantains (1 plantain cut into 1/3 inch slices tossed in olive oil and salt and baked on a rack over a cookie sheet for 10 minutes on 450 then flip and bake for another 10), soft boiled @vitalfarms eggs (tutorial in highlights), and SAUCE: 1/2 mango blended with a few tablespoons of @sietefoods chipotle sauce. •
