I know it is Toast Tuesday, but goodness gracious, it is far too cold for anything that is not steaming hot. Anyone else on the same page? For dinner today, I’ve cooked my aubergine, broccoli & mushroom curry and served it with some millet. Yes, millet!
If you’ve never tried millet, you are missing out! Millet is a highly nutritious grain; it is very rich in iron, calcium and phosphorus and in the amino acid methionine, which is often lacking in plant proteins. Millet is naturally gluten-free, low in fat and easily digestible. For these characteristics, it is often referred to as a ‘super cereal’.
