Food is not only flavourful when it is cooked in excessive quantities of oil. Flavour comes mainly from spices and herbs. Granted, oil adds a certain mouthfeel that makes food richer. That said, don’t automatically think that because food doesn’t look greasy, it is not tasty. Give it a go first ?
