?Indian-spiced kidney bean chili?Cozy up to this warming chili. You won’t regret it, I promise.?Plus, making it is as ‘easy as pie’. (Though pie is actually not that easy to make, but the expression originated because it’s so easy to eat!!!)
?Recipe: Sauté 1 small yellow onion (thinly sliced) in a little olive oil or veggie broth until starts to brown a little. Add 1 tsp maple syrup and sauté a few more minutes until golden brown. Add 1 inch ginger (minced), 3 garlic cloves (minced), 1 green chili (deseeded, minced), 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp garam masala, 1/2 tsp smoked paprika. Sauté another minute until fragrant, adding more oil or veggie broth as needed. Add 1 tbsp tomato paste and cook another minute while stirring. Add 1-15oz can crushed tomatoes and 1-15oz can kidney beans (with liquid). Bring to a boil before reducing heat and simmer 10 minutes. (Add some veggie broth if desired.) Salt to taste.
