I’ve been craving vegetable stews since I got here but I haven’t been able to have it because I couldn’t find the exact leaves I needed. Every time I’ve been out so far, I’ve found kale but they’ve been so dead-looking I’ve just not been able to bring myself to buy them.

The local vegetables here are so much fresher and look so nutritious, it just doesn’t make sense to use vegetables that have travelled so far and have probably lost most of their nutritional value. If you see a recipe you like, but don’t have the exact ingredients, I would suggest using the closest thing you can find and adapting it as necessary. I don’t think I’ll be using foreign vegetables while I’m out here unless I find good quality versions.

Thankfully I found the leaves I was looking for today, they’re called ‘green’. I’ve used the same vegetable recipe I posted on my blog sans the dried mushrooms because I don’t have them here.

I ate the vegetable stew with boiled plantains (it seems my tastebuds matured 😂) and pan roasted tofu.
