Monday SHRIMP bowl with HONEY SRIRACHA chickpeas and a SWEET CHILI TAHINI dip. Happy Monday loves! I hope you’re all having a fabulous start to the week. I slept in today unintentionally, and got a late start but it also felt good to get some extra sleep. Using up these extra roasted tomatoes from yesterday…need to make more soon! Also, so excited to be eating my first kabocha squash of the season. I’m curious…What are you grateful for this week? Practicing new acts of gratitude recently. •

Deets: sautéed shrimp, roasted tomatoes, peas, roasted kabocha squash, honey sriracha chickpeas (peel chickpeas, toss in some sriracha and a little honey and roast on 400 for about 20 minutes), and this sweet chili tahini dip (@soomfoods tahini, sweet chili sauce and almond milk yogurt). •
