?Recipe: Sauté 1 yellow onion (small dice) in olive oil or veggie broth until translucent, about 5-7 minutes. Add 4 minced garlic cloves, 1 tbsp chili powder, 1 tbsp smoked paprika, 1 tbsp cumin and cook another minute until fragrant. Add 8oz white or brown (cremini or portobello) mushrooms, sliced into quarters. Cook a few minutes until mushrooms just release their moisture. Transfer to large bowl. ?Mash 1-1/2 cups cooked black beans with a fork until only a small amount of whole beans remain. Add mashed beans, 1 cup cooked brown rice, 1/3 cup breadcrumbs (I used gluten-free chickpea breadcrumbs) and 2-3 tbsp vegan Worcestershire sauce. Mix well (hands work best) until evenly incorporated. Add salt to taste. Form patties of desired size. (Makes about 8.) Bake on lined sheet at 375F until start to brown and become firm, about 20 minutes, flipping half way. Allow to cool a few minutes so they get even more firm.
