When it comes to sandwiches, I don’t mess around. I want it loaded AF and packed with flavor. That’s exactly what I whipped up for lunch today, and let me tell you, it was nothing short of amazing. With a packed schedule, I didn’t have much time to spare, but this sandwich was quick, easy, and oh so satisfying.

I started by toasting two slices of almond paleo bread to perfection. Then, I slathered on some birds eye chili mustard for an extra kick. Next came the toppings – red onion, bell pepper, roasted chicken, baby spinach, creamy avocado, ripe tomato, and my absolute favorite basil and garlic kraut. Trust me, this sauerkraut takes this sandwich to a whole new level.

To wash it all down, I treated myself to a soda. I don’t usually indulge in carbonated beverages, but hey, sometimes you have to treat yourself, am I right? This lunch was the perfect pick-me-up on this beautiful Wednesday afternoon. I hope you’re having a fantastic day filled with love and light.


Craving a Tuna Sandwich on Tuna Tuesday

Happy Tuna Tuesday everyone! Today I was craving a delicious tuna sandwich and thanks to Barely Bread, I was able to create the perfect one using their amazing grain-free baguette. I mixed some Safe Catch Foods tuna with Forager Project cashew milk yogurt, Himalayan salt, pepper, chopped red onion, chopped bell pepper, and Frontier Co-op curry powder. The combination of flavors was incredible!

I piled the curried tuna mixture onto the Barely Bread baguette along with some fresh greens and sliced tomato. It was an absolute delight for my taste buds! I couldn’t get enough of it. Each bite was a burst of flavor and I couldn’t believe how easy it was to make such a delicious meal.

I want to raise a toast to Tuesday and hope that all of you are having a wonderful day. It’s amazing how a simple meal can bring so much joy and satisfaction. A good tuna sandwich really hits the spot, especially when it’s made with high-quality ingredients like the ones I used today.

I am grateful for companies like Barely Bread and Safe Catch Foods for providing such great products that make it easy for me to create tasty and nutritious meals. Eating well doesn’t have to be complicated or boring, and I’m thankful for the options available to me that make it so much fun to experiment in the kitchen.

Saturday Sandwich!

Saturday Sandwich! This is something like a grilled cheese…except there’s no cheese! ? I made a #vegan “cheesy” filling with tofu, nutritional yeast, turmeric, herbs and  cashew milk yogurt! Sounds weird but it was actually quite tasty…in between an baguette ? that was grilled in ghee with some tomatoes and  arugula.  Hope you’re having a great weekend!

Stacked Sandwich Saturday!

Stacked Sandwich Saturday! Happy Weekend loves! I woke up to a cooler morning, which actually felt nice with the ocean breeze ❤️ Went to the gym and killed some cardio and a leg workout. Been a while since I’ve hit it hard on my legs and it felt good. Allll I wanted was savory today and this stacked bagel sandwich did not disappoint!! Toasted onion, garlic and sea salt  bagel with  cream cheese, tomato,  arugula, sautéed mushrooms, roasted kabocha squash and a scrambled organic  egg. SO FREAKING GOOD! most delicious breakfast sandwich

Happy Sunday! This was possibly the most delicious breakfast sandwich I’ve ever had ? I bought a GIGANTIC portobello mushroom cap yesterday, so of course I decided to use it as a juicy bun ?‍♀️ broiled it up and stacked some soft scrambled  eggs, a juicy slice of heirloom tomato, avocado, roasted kabocha squash,  greens and jalapeño cream cheese. SO good guys! DO IT! I love you all and hope you have an amazing day

Taking a study break with these delicious mini open faced sandwiches ? just olive bread with avocado, sliced tomato, cucumber, basil, salt + pepper ? so simple and satisfying

Fueling up on this busy day with this delicious veggie sandwich ?? I basically use sandwiches as an excuse to use up any veggies I have in the fridge; this one has hummus, avocado, red peppers, cucumber, spinach and olives, seasoned with salt + pep ? the perfect pick-me-up lunch for a day full of CDRE studying


smoky tofu sandwich

Dreaming about this smoky tofu sandwich while at school today ? To make the smoky tofu ??:

  • Press firm or extra firm tofu for about 10 minutes until most of the water is out
  • Slice the tofu thinly – Whisk together 1 tsp of liquid smoke, 1/2 tsp of smoked paprika, 1 tbsp of maple syrup, 1 tbsp of oil, 1 tbsp of soy sauce, a pinch of black pepper and a splash of water until combined – Marinate the tofu slices for at least 10 minutes (but the longer the better!)
  • Fry them up in a pan on medium heat with a little bit of oil for about 5 minutes on each side, until golden brown
    Add to sandwiches, wraps or bowls! These are sooo good and add so much flavour to a simple dish ? enjoy!

B.B.L.A.T. Sandwich!

B.B.L.A.T. Sandwich! That’s right double B! Why? Because that’s a grain free BROCCOLI bun you see there! Lettuce ? , turkey bacon ?, juicy heirloom tomato ? and mashed avocado ? on this delicious bun!
