Who would like to join me? I’m enjoying this fully loaded bowl of cauliflower, 🍅, pea and lentil curry with long grain and wild rice. I’ve added very lightly toasted cashew nuts for crunch and healthy fats instead of good ol’ 🥑 today.
This is a super easy one-pot wonder 🙌🏾. You just cook your lentils with Garam masala, ground coriander, ginger, turmeric, garlic, onions, cayenne pepper, vegetable broth and tomato paste. Once the lentils start to soften or after around 6-8 minutes of cooking, add the cauliflower, peas and cherry 🍅. Cook for a further 5-7 minutes or until vegetables are cooked and lentils are softened to your desired consistency. Serve over rice or enjoy with chapati 😊 P.S For extra goodness, add a splash of coconut milk or plant-based cream 😋
