You know your digestive health is good shape when you can eat a bowl like this a…


You know your digestive health is good shape when you can eat a bowl like this and not have to worry about pain or bloating. I know I keep going on about gut health ?, but until you’ve suffered, you won’t understand how much you take a well-functioning gut for granted. That said, bowls like this will always be my favourite! They allow me to get a variety of essential macro & micronutrients in one sitting, and they are very filling. Win-win, right??

Legumes are the most common plant-food that people tend to have issues with. If you are a newbie to them, I’ll highly recommend starting with split lentils, particularly the red and yellow ones. They are the easiest to digest, and they cook in the shortest amount of time. I’ll suggest cooking them until they are very tender and almost mushy. ~
In this bowl, I have wild & white rice, lentil curry, ? & ?. To make the lentil curry, you’ll need:
?1 medium shallot, finely chopped
?2 garlic cloves, finely minced
?100g red lentils, rinsed and drained
?1 tablespoon tomato puree (paste)
?1 teaspoon ground coriander
?1 teaspoon Madras curry powered
?1 teaspoon ground ginger
?1 teaspoon Garam masala
?1 vegetable stock cube
?½ teaspoon ground turmeric
?3 tablespoons coconut milk ?1 birds eye chilli (use regular chilli for less heat)
?2 tablespoons freshly chopped coriander

✨Heat a tablespoon of oil in a medium saucepan over medium heat. Add the spices and chopped shallots fry for 1-2 minutes until fragrant. ✨Add the tomato paste and garlic and continue to cook for a minute then add the lentils, chilli, stock cube, coconut milk and around 250ml of water. ✨Stir thoroughly to combine, then turn the heat down to simmer and cook for 15-20 minutes or until the lentils are tender. ✨Stir in the coriander, then take the pan off the heat and serve alongside rice or naan bread and any additional veggies of your choice.
