Are potatoes bad for you? 🤷♀️ I get this question ALL the time- from people sliding into my DM’s to clients and friends asking me this regularly. The answer is NO 🙌🏼 Potatoes are a great source of iron, potassium, fibre and folate ✨ My roommates from university can attest to the fact that potatoes and I have had a long love affair- I once even choked on a potato that I dipped into a sauce made out of blended potato (which I admit was a bit extreme 😂).

The truth is that it’s the way potatoes are typically cooked (fried) that give them their bad reputation 🌿 Potatoes can most definitely be a part of a balanced diet and they’re a food I integrate regularly (as you can see by my feed 😂)- i just try to eat them baked, boiled or steamed more often than fried ✨.

With that being said, here’s how I made these baked fries👉🏼: Slice yellow potatoes (I used 3 medium sized ones) into fry shapes, then sprinkle with 1 tsp garlic powder, 1 tsp thyme + salt and pepper to taste. Bake at 450F for 25 minutes. Meanwhile, whisk together 1 tbsp vegan mayo, 1/2 tsp sriracha + 1/4 lime, juiced. Serve together + enjoy! 💛
