Dreaming of this warm farro grain bowl with roasted maple glazed carrots, cabbage and beets ✨ With the longer days and (slightly) warmer temperatures I’ve been craving tons of veggies, but still want to eat something warm at most meals 🌿 Cue this incredibly easy + versatile grain bowl ✨ I’ve never made farro before this, and I definitely didn’t perfect it, but I love the nutty flavour and that it’s such a great source of fibre, protein, magnesium and zinc 🙌🏼.
To make 👉🏼: Cook farro with the “pasta” method- 1 cup of farro in about 4 cups of water, cooking at a boil for about 20-30 mins (you need to taste it to see if it’s done), then draining off the excess water. Meanwhile, toss 3 carrots (batoned), 1 sliced beet and 2 large slices of cabbage in 1 tbsp maple syrup, a pinch of salt + pepper and 1 tsp of garlic pepper. Roast at 450 F for 20 mins. Once all components are done, drizzle with a lemon tahini dressing (link in stories) and enjoy! 💛
