Kale Yeah Soft Flour Tortillas ????The Classic Mexican flatbread with a bit of a spin to get your greens. These were super fun to make & also perfect to load with your favorite filling. Enjoy!
What you need: 1 1/2 cups (180 g) all purpose flour, 1 cup whole wheat flour (120 g) , 6 tbl vegetable oil, 1 tsp kosher salt , 1 tsp baking powder, 2 cups packed kale leaves chopped with hard stems removed (56g) What you do:
1️⃣Blanch kale: Bring a large pot of water to a boil add 2 tsp is kosher salt, add kale, boil for 30 seconds. Using a slotted spoon, retrieve kale place in a bowl of cold water to stop cooking. Then squeeze out water from kale.
2️⃣Using a high speed blender, purée kale till smooth with 1 tbl oil & 1/2- 3/4 cup hot water from salted water from stove. Set aside.
3️⃣In a mixing bowl combine flours, salt & baking powder. Add remaining 5 tbl of oil, rub oil into flour till course & crumbly.
4️⃣ Add kale purée to flour. Mix until dough becomes shaggy and starts to come together. Take out of bowl and kneed 2-3 min till dough becomes smooth, if sticky add a bit more flour. Rest 1/2 hour covered with tea towel or plastic wrap
5️⃣Divide dough into 8 equal sized pieces
Roll out dough into a circular 7- 8 inch diameter till desired thickness
6️⃣Heat non stick pan on med/med high heat for 3 min. When hot, place tortilla on pan, heat for 30 sec, bubbles will start to form, flip & heat for another 30 seconds. Immediately cover with with a tea towel or foil. Repeat. As you get into the groove you can roll out a tortilla while one is cooking or split the work and make them with a friend. Enjoy!!
