Relying on this easy peanut-lime buckwheat Buddha bowl to get me through this busy week ✨ I know I always say buddha bowls are easy (and they really are), but this one is seriously easy ?? This bowl relies on frozen veggies, frozen edamame + buckwheat noodles to make this super affordable, easy and delicious ?.

To make ??:
In a pan on medium heat sauté frozen edamame + veggies of your choice (I use frozen broccoli, bok choy + grated carrot). Cook until heated through (~5-7 mins). Meanwhile, bring a pot of water to boil and cook buckwheat noodles as per package instructions. In a small bowl, whisk together 2 tbsp peanut butter, 1/4 tsp ground ginger, 1/2 tsp sriracha, 1/2 tbsp soy sauce, the juice of 1 lime, 1 tbsp maple syrup + enough water to thin. Once edamame, veggies and noodles are done top with sauce and enjoy! ?
