This was actually last night’s dinner, but I reheated the leftovers this morning.
It is just little out of my comfort zone – noodles in the morning lol, so it’s totally okay if you’re giving me the side-eye right now 🤣 If I can eat rice in the morning, why can’t I eat noodles? Exactly…and isn’t this just the perfect way to start your day? With greens?😉
This is such an easy recipe you just want to boil your noodles alongside broccoli and mangetout. While that’s cooking mix soy sauce, grated ginger, grated garlic, chilli sauce and splash of rice wine vinegar. Once the noodles and vegetables are cooked, toss them in the marinade. If you don’t eat oil free, add some sesame oil for extra flavour. Top the whole thing with sesame seeds and spring onions. If you have extra time, you can add mushrooms, tofu or beans. I’ve added some chickpeas to mine 😊.
Of course this makes a great quick lunch or dinner. Have a wonderful day 💙
