Relying on this warming coconut chickpea + sweet potato curry to brighten up this gloomy day in Toronto 🍂 This takes about 30 minutes to whip up, making it the perfect weekday meal ✨.
To make 👇🏼:
Sauté 1 onion + 3 cloves of garlic until translucent. Add 1 large peeled + chopped sweet potato, 1 head of broccoli, de-stemmed, 1 can of drained + rinsed chickpeas, 2 large carrots, + 2 cups of sliced mushrooms + 3 tbsp of curry powder to the pot. Sauté on low for ~5 minutes, then add 2 cans of coconut milk + 1 tbsp soy sauce. Simmer for ~20 minutes until the sweet potato is fork tender. Finish with the juice of half a lime + enjoy! 💛
