Reposting this Freshii inspired peanut lime bowl with savory mushrooms + spicy tofu because even though my body is cravingggg all the vegetables after the holidays, I still need tons of flavour in my meals ✨ This has become a weekly staple in our house because it’s SO delicious and simple to throw together 🙌🏼.
To make 👇🏼:
Cut 1/3 block of extra firm tofu into cubes and bake at 450 degrees F for 25 minutes. Cook 1 cup of quinoa as per package instructions. Meanwhile, sauté 1 cup of sliced mushrooms with 2 tsp soy sauce until all the liquid in the mushrooms has dissolved. Slice veggies of choice (I used grated carrot + arugula). Whisk together 1 tbsp peanut butter, 1 tsp sriracha, 2 tsp maple syrup, 1 tsp soy sauce, 1 tsp sesame oil, + the juice of 1 lime. Set aside. When the tofu is cooked, drizzle with sriracha and toss to combine. Add all ingredients to a bowl and drizzle with the peanut lime sauce + enjoy! 💛
