Savory breakfast toast
Tag a friend and make this ASAP.

INGREDIENTS
Sprouted, whole wheat toast or your choice of fav bread
Almond herb cheese (this is a local Mex brand but feel free to use humus or any vegan cheese spread OR… Type “ricotta” in the search bar of my blog for a delicious homemade vegan ricotta)
1-2 small eggplants
1 tsp avocado oil
1 tsp bbq seasoning (I used @SpicelyOrganics)
1 tsp salt
1-2 tomatoes
1/4 bunch cilantro
Sesame seeds for garnish
METHOD
1. Slice eggplant, drizzle avocado oil (or any oil of your choice) and evenly season each side of eggplant with bbq seasoning and salt.
2. Heat avocado oil in a large sized pan over medium heat. Place seasoned eggplant on pan and cook for 2-3 minutes on each side.
3. Says tomatoes and mince coriander. Combine both in a small bowl and season with salt and pepper.
4. Toast slices of bread… Once bread is toasted spread a generous layer of vegan cheese spread, followed by bbq seasoned eggplant and topped off with tomatoes + cilantro and finish off with a sprinkle of sesame seeds.

1/4 bunch of coriander
Sesame seeds to decorate

METHOD
1. Slice the eggplant, drizzle avocado oil (or any oil of your choice) and evenly season each side of the eggplant with salt and BBQ seasoning.
2. Heat the avocado oil in a large skillet over medium heat. Place the seasoned eggplant in the pan and cook for 2-3 minutes on each side.
3. chop the tomatoes and chop the cilantro. Combine in a small bowl and season with salt and pepper.
4. Toast slices of bread … Once the bread is toasted, spread a generous layer of vegan cheese, followed by an aubergine seasoned with bbq, and topped with tomatoes + coriander and finish with a pinch of seeds.
