SUSHI BOWL ✨ Yet another meal that requires very little cooking time, which is completely necessary with how busy things have been around here the past few days. I’d forgotten how convenient and delicious this sushi bowl is (I made this ALL THE TIME during my dietetic internship!) but rediscovered it this week and I’m very pleased I did✨PS- Enrollment for Thriving on Plant-Based Fundamentals, my virtual course teaching you everything you need to know about the fundamentals of plant-based nutrition, opens TOMORROW for those on the waitlist! Send me a DM if you want to be added to the waitlist to get early access to enrollment ☺️.
To make 👇🏼:
Cook quinoa or brown rice (I used quinoa here). While that’s cooking, microwave a sweet potato to steam. Meanwhile, chop veggies- I love carrot, cucumber, and usually avocado but I was out today. Steam edamame as per package instructions. Once all components are done, top with sesame seeds, a splash of rice vinegar, soy sauce, dried nori sheets + vegan sriracha mayo (just mayo mixed with sriracha- totally optional). Enjoy! 💛
