The ultimate (+ easy!) VEGGIE BURGERS ✨I am VERY picky when it comes to veggie burgers- they need to be flavourful, moist (but not too moist), and have a good texture to them… And not to mention, I hate when they fall apart ? These veggie burgers check all of the boxes and are SO easy ?? I didn’t have any burger buns, so I paired them with arugula, roasted beets, orange pepper + a sriracha drizzle. This recipe makes about 7 burgers, making them the perfect meal prep item! ? What’re your favourite burger toppings?! ?.

To make ??:
Preheat oven to 450F. Sauté 2.5 cups of mushrooms with 1 tsp soy sauce for 5 minutes until water has released. Add 1 can of drained and rinsed black beans, 1 carrot, grated, + 2 cups of cooked quinoa. Sauté until combined, then add 2 tsp smoked paprika, 2 tsp garlic powder, 2 tsp chili powder, 1 tsp onion powder + 1 tsp cumin. Sauté for 5 minutes. Meanwhile, combine 2 tbsp of chia seeds or grounds flax seeds with 6 tbsp water and let sit for 5 minutes. Transfer burger mixture to a large bowl, then add 3/4 cup of oat flour (can be made in a blender by blending plain oats), 1/4 cup sunflower seeds, 1 tsp apple cider vinegar, 1 tbsp soy sauce, 1/2 tsp black pepper and chia/flax mixture. Mash everything together with a potato masher, then taste the mixture and adjust seasonings as per preference. Roll mixture in palms to make an even ball then flatten into patty shapes. Cook at 450 F for 10 minutes on each side (or BBQ) + enjoy! ?
